Another beautiful day in New Orleans. I had my coffee and read the Times-Picayune Newspaper out on my deck
this morning. I have been thinking of what I wanted to write about today. Something of a serious nature !
Steve and I made the decision to get lean, mean, and healthy after Steve was diagnosed with Type 2 Diabetes,
which happened in the Wonderful Year of 2007. Most of you know that was the year we lost Thumper, I am sure!
So much good news that year, but sometimes it takes bad news to help you make changes in your life. We
decided at that time that we both needed to get serious about losing weight and getting healthy.
Steve was weighing in at about 320 pounds and me at about 240 pounds. Not good for sure. I am happy to report
we are still working on this, as it is a lifelong project, however we are both down in our weight and we have added
exercise to our routine. Steve has lost about 70 pounds and I have lost 60 pounds. We have not starved ourselves,
and we have not gone on an extreme diet. We have lost the weight gradually which is a good thing. It is now
5 years later and we are still down and working on losing some more.
Diabetes is a scary, dangerous disease. Diabetes can cause serious health complications. That's why it is very
important to know how to spot type 2 diabetes symptoms. Even pre-diabetes can increase the chance of heart
disease just like type 1 or type 2 diabetes. Talk to your doctor about preventative measures you can take NOW
to reduce the chance of type 2 diabetes and heart disease.
Some of the symptoms of type 2 diabetes due to high blood sugar may include the following :
Increased thirst
increased hunger (especially after eating)
Dry mouth
Frequent Urination
Unexplained weight loss (even though you are eating and feel hungry)
Fatigue (weak, tired feeling)
Blurred Vision
Headaches
Loss of consciousness (rare)

I feel we all should take better care of ourselves. We get so busy in the day to day life that we forget to take time for
ourselves. We must make time to eat better and healthier. None of us want to have to deal with diabetes. Believe me
it takes alot of time when you have to treat this disease and it can have serious effects on your lifestyle. Steve's major
complaint is numbness in his hands and feet. Tingling in his feet from nerve damage which he has to treat with a
medication called Lyrica. It helps but doesn't totally take the feeling and pain away.
So bottom-line, give your health some serious consideration, and save yourself some pain and aggravation and

you be successful at weight loss and getting healthy and avoiding diabetes. Let's just do it !
Here is a recipe from my Fix-It and Forget-It Diabetic Cookbook by Phyllis Pellman Good with American Diabetes Association
Very Special Spinach (cooked in slow cooker)
Makes 8 servings, use 4 quart crock-pot or bigger
Ingredients are:
3 10 0z boxes of frozen spinach, thawed and drained
2 cups of low-fat cottage cheese
1 1/2 cups of grated fat-free cheddar cheese
3 eggs
1/4 cup of flour
4 Tbsp (1/4 cup)light, soft tub margarine, melted
Mix together all ingredients, pour into slow cooker. Cook on high 1 hour, then reduce heat to low and
cook for 4 more hours.
Calories 160 per serving, protein 19 gm per serving
Simple, healthy and delicious. You can fix the night before and turn the crock-pot on before you leave
for work in the morning. Dinner will be ready for you when you get home. Love it !
