Good Morning Ya All,

It is Wednesday, and we have made it half way through another week. I am rested finally after an awesome party on Saturday and a followup
get together with the Giglio Family on Sunday ! So much fun and so nice to see everyone having a good time and seeing people they have

Today is my third day on my "no exception" diet, I am doing great, I lost another pound this morning. So I am down three pounds already in the
past few days ! I can already feel the difference in how I feel. I am really concentrating on drinking my water to flush my body of the overload of food.

I also posted a new confirmation on my refrigerator to remind me of what I am doing. In addition to my Count my blessings and my calories SIGN, I have
added a sign that reads, TIME TO FOCUS, NO EXCEPTIONS, AND JUST DO IT ! 

It is a great way to remind yourself that when you open that refrigerator door for "something",  to grab something healthy to eat or drink ! It works for me,
it can work for you too !

Steve and I got a wake-up call a few years ago in 2007 when Steve was diagnosed with Diabetes. He had been pre-diabetic for several years but
that did not shake us enough to change our diet, but the diagnosis of Diabetes did. We changed our eating habits almost immediately !

Let's start first with what is DIABETES ! Let's begin with insulin. It is a hormone that is produced in the pancreas, which is an organ located near your
stomach. When you eat food, it is digested and broken down in glucose, a sugar ! In this form it can travel around to feed all the cells in your body by way
of the bloodstream. But the glucose cannot get into your cells unless insulin is there to open the door. Without insulin, the glucose stays in the bloodstream.
And each time you eat, more glucose goes into you bloodstream. High Levels of blood glucose or blood sugar is a sign that you have Diabetes.

There are two types of diabetes, type 1 and type 2. In type 1 diabetes, the body cannot produce insulin at all. Something has caused the body to destroy the
cells in the pancreas that make insulin. People with type 1 diabetes must have insulin injections or use an insulin pump to stay alive.

Type 2 diabetes, the body is either not making enough insulin or not using it well. People can help their bodies use the insulin more effectively by losing
weight and being active every day. Some people have to take diabetic medicine or insulin to get their blood sugar levels back to normal.
Question: Do people with diabetes have to eat a special diet ? No, they should eat the same foods that are healthy for everyone-whole grains, vegetables, fruit, and small
portions of lean meat. Like everyone else, people with diabetes should eat breakfast, lunch, and dinner and not put off eating until dinnertime. By then, you are ravenous
and will eat too much. This sends the blood sugar levels soaring in people with diabetes, and doesn't allow them to feel hungry for breakfast the next morning. Some
people(with or without diabetes) do best when they eat five or six small meals or snacks a day !

So just to summarize these past few paragraphs, wake-up before you are diagnosed with Diabetes. Know how your body works and what to do to make it the most
efficient body you can have. We only live once and why not make your body healthier which in turn makes us a happier person. Sometimes just being aware of what
can happen or knowing what to do for yourself is the first step to getting healthier. We all rely on food for comfort during stressful times, but your choices  can be
better and that will help lift our spirits and let us enjoy life, and find solutions to our problems or situations!

I am attaching a recipe from www.realsimple.com,  to share with you all today that is perfect for this time of year when it is 113 degrees in
 Las Vegas or 90 degrees in New Orleans with 90% percent humidity. Let's work on changing the our lives for the long haul and enjoy more of our life !

Good Morning Whale Watchers,

I just returned for an hour long bike ride up on the levy and trying to spot an alligator. I understand we have one in the
pond near out house, on the other side of the levy, thank goodness. I would like to see him, he is suppose to be a
big daddy ! As long as he is not hungry when I see him or he is a good distance....I will be fine...lol !

I spotted this post on the WebMD website about a beer a day keeps the doctor away ! Interesting to say the least.
This website has great information, as far as healthy foods, foods that are bad, food that is good, tips on saving
calories and just lots of important information to help you get slim and trim. Check it out !

Okay, and I am sorry I messed up saying that yesterday was hump day, when it is really today ! You lose track
of the days when you are not working a scheduled 40 hour day job. We all make mistakes in life, like my Dad
always said "The only back mistakes, are the mistakes you don't learn from ". He is so right, this applies to
our eating habits as well as life in general. If we make a mistake, and eat too much or make the wrong choice,
we are the ones who pay for it. WE just move on from there, you can't change the past, only the present and
the future. The sooner we all realize that, the better of we will be in all aspects of our lives.

Just learn from it and correct the problem, or at least forgive yourself and move
on to bigger and better things. Start fresh with the new day. Each day we eat healthy and make the right choices, we are closer to our
goal of being healthy and thinner. Today is the first day of the rest of our lives. So let's keep positive and continue
to move forward and lose weight and be able to enjoy life to it's fullest !

Have a great rest of the week and it looks like we will be able to have a couple of beers to help celebrate St. Patrick's Day !!!
Must be the luck of the Irish....I am looking for a four leaf clover in my front lawn, but I haven't found on yet. I guess they are
very rare. I will keep looking, and you keep working and we will reach our goals.

My Launch of my Pampered Chef Website Today !

Hi fellow cooking enthusiasts,

Today is the launch of my new business venture. I am now officially a Pampered Chef Consultant !

new business. The Pampered Chef Products are top of the line. I have owned many of the products
myself and have used them in my everyday cooking, and especially some of the products for the holiday cooking that I do. It makes cooking more fun, and easy with the help of their tools. My
goal is help families cook healthy, simple recipes in the least amount of time and cleanup. I would love to have your business.

A Chocolate A Day will keep the Doctor Away-Recipe included for a Grilled Chocolate Sandwich

Good Morning Whale Watchers and fellow Chocoholics,


Hey chocolate  is not such a bad thing, dark chocolate is good for you in moderation ! Yes this is a true statement.

Dark chocolate  helps to lower blood pressure and gives you flavinoids and antioxidants to help keep our bodies healthy.

Enjoying a 1.5 oz dark chocolate bar can actually be a daily treat, and it is a healthy food, if you keep it to that amount.
If you get carried away, then of course the fat content will start to hurt you. I have 1 oz square of chocolate each
night after dinner. The chocolate is my dessert. I enjoy it with a cup of green tea or a cup of coffee. So good
and so satisfying. Again, we are learning to eat things in moderation, right ?

We are going into the weekend and as I stated yesterday I am not going to treat myself to anything extra
this weekend to see if I can get off a couple of more pounds before Monday. I am down another pound down this morning
I weighed myself, my weigh is moving in the right direction and I want to keep that going!!

My offer is still open, whoever loses the most weight on
Monday, this week coming, will get a surprise ! So weigh yourself on Monday morning, if you think your
loss is good and we will see who wins this challenge. Let's have a great weekend and remember to eat
healthy and lean.

I found this kind of crazy recipe for a Chocolate Grilled Sandwich, I know we all love grilled cheese
sandwiches, but this sounded rather interesting. Let me know if you try it and if it is good, okay?
This recipe was found on  http://www.eatingwell.com Check out their website. It has a wealth of
information and lots of great recipes as well !

The Grilled Chocolate Sandwich

Ingredients:

1/4 cup fat-free evaporated milk
3 ounces bittersweet chocolate, finally chopped
1 1/2 Tbsp of butter, softened
8 slices thin whole-wheat bread(white bread will work, but not as good for you)
3 Tbsp bittersweet or semi-sweet chocolate chips(I recommend Nestle's miniature semi-sweet chocolate chips)
2 Tbsp chopped and toasted hazelnuts, (optional, and other nuts can be used in place of hazelnuts, slice almonds would be good)

Preparation:

Heat evaporated milk just until boiling. Add chocolate, let stand for 1 minute, then whisk until smooth. Let cool slightly.

Spread butter on one side of each slice of bread. Divide the chocolate mixture on the unbuttered side of 4 slices, leaving a
little border. Press chocolate chips and nuts, if using, into the chocolate. Cover with the remaining slices of bread, buttered side up
and press lightly with spatula in skillet.

Cook the sandwiches in a large nonstick skillet over medium-high heat for 1 to 2 minutes. Turn over, press with spatula, and cook
until nicely browned and the chocolate is barely melted, 30 seconds to 1 minute.

Serve warm, the kids, grand-kids, and the big kids will love these. Almost as good as some smores cooked over the campfire !!!

Nutrition 151 calories per serving, 7 g fat, 4 g sat , 1 g mono, 6 mg cholesterol, 21 grams carbohydrates , 4 g p0rotein, and
2 grams of fiber.

This recipe make 8 servings !

Hey Tyler, John and Christopher, we have found another version for you to try of your beloved grilled cheese sandwiches, don't forget
 to add orange drink to the mix....lol

Good Morning All,

Another beautiful day in New Orleans. I had my coffee and read the Times-Picayune Newspaper out on my deck
this morning. I have been thinking of what I wanted to write about today. Something of a serious nature !

Steve and I made the decision to get lean, mean, and healthy after Steve was diagnosed with Type 2 Diabetes,
which happened in the Wonderful Year of 2007. Most of you know that was the year we lost Thumper, I am sure!
So much good news that year, but sometimes it takes bad news to help you make changes in your life. We
decided at that time that we both needed to get serious about losing weight and getting healthy.

Steve was weighing in at about 320 pounds and me at about 240 pounds. Not good for sure. I am happy to report
we are still working on this, as it is a lifelong project, however we are both down in our weight and we have added
exercise to our routine. Steve has lost about 70 pounds and I have lost 60 pounds. We have not starved ourselves,
and we have not gone on an extreme diet. We have lost the weight gradually which is a good thing. It is now
5 years later and we are still down and working on losing some more.

Diabetes is a scary, dangerous disease. Diabetes can cause serious health complications. That's why it is very
important to know how to spot type 2 diabetes symptoms. Even pre-diabetes can increase the chance of heart
disease just like type 1 or type 2 diabetes. Talk to your doctor about preventative measures you can take NOW
to reduce the chance of type 2 diabetes and heart disease.

Some of the symptoms of type 2 diabetes due to high blood sugar may include the following :

Increased thirst
increased hunger (especially after eating)
Dry mouth
Frequent Urination
Unexplained weight loss (even though you are eating and feel hungry)
Fatigue (weak, tired feeling)
Blurred Vision
Headaches
Loss of consciousness (rare)

I feel we all should take better care of ourselves. We get so busy in the day to day life that we forget to take time for
ourselves. We must make time to eat better and healthier. None of us want to have to deal with diabetes. Believe me
it takes alot of time when you have to treat this disease and it can have serious effects on your lifestyle. Steve's major
complaint is numbness in his hands and feet. Tingling in his feet from nerve damage which he has to treat with a
medication called Lyrica. It helps but doesn't totally take the feeling and pain away.

So bottom-line,  give your health some serious consideration, and save yourself some pain and aggravation and

This website can provide all kinds of tips, recipes, exercise information and just about anything you might need to help
you be successful at weight loss and getting healthy and avoiding diabetes. Let's just do it !

Here is a recipe from my Fix-It and Forget-It Diabetic Cookbook by Phyllis Pellman Good with American Diabetes Association

Very Special Spinach (cooked in slow cooker)

Makes 8 servings, use 4 quart crock-pot or bigger

Ingredients are:

3 10 0z boxes of frozen spinach, thawed and drained
2 cups of low-fat cottage cheese
1 1/2 cups of grated fat-free cheddar cheese
3 eggs
1/4 cup of flour
4 Tbsp (1/4 cup)light, soft tub margarine, melted

Mix together all ingredients, pour into slow cooker. Cook on high 1 hour, then reduce heat to low and
cook for 4 more hours.

Calories 160 per serving, protein 19 gm per serving

Simple, healthy and delicious. You can fix the night before and turn the crock-pot on before you leave
for work in the morning. Dinner will be ready for you when you get home. Love it !

Whale Watchers Corned Beef and Cabbage Recipe

Good Morning Whale Watchers,

I am sorry I am getting this out a bit late this morning. I actually slept in this morning. I think the bike riding is
wearing me out, but it is a good kind of tired. I am happy to report I lost two pounds this morning.The weather
here in New Orleans has been perfect the past few days. This sun is shining and the temperature is about
75 degrees for the high. Not a cloud in the sky which means very little humidity. Yes I love it !

Yesterday, I bought a 2 planters and some pretty flowers for my front deck. I also spent some time out there
this morning, just watching the birds and butterflies. We also have a little squirrel that climbs up  and down
our big tree in the front. I love being outdoors and nature, don't you?

Today as we approach St. Patrick's Day, which by the way, is a big celebration in New Orleans, I want to
include a recipe for Corned Beef and Cabbage. It is a great low calorie dish that we should eat more often. I will
include the recipe at the end of this email. Can you believe they throw carrots and potatoes off the parade floats
for St. Patrick's Day, instead of beads!!! If you have a favorite  recipe for Corned Beef and Cabbage, please share
with the group. I know we have alot of Irishmen and women in our Whale Watchers group. One of them
is Chrystal Lee, our Freddie, and Tim and Peggy Buzbee to name a few.

Bye the way, Tim and Peggy have the most adorable, beautiful grand-daughter names Juliana. I received a
picture of her in the mail yesterday and fell in love. The cheeks on the baby are too cute ! The parents of
Juliana are Brandon and Jessica Buzbee. Great job you two! I know of two proud grandparents, yes Tim
and Peggy Buzbee. Congrats to all !

Okay, babies are distracting and they make me smile. Now back to the reality of eating healthy. What
diet are you following. Has anyone heard or tried the 17 day diet ? I pretty much follow my own diet,
I take some from each diet and incorporate what works for me.

I eat very  simply. Eggs or hot cereal for breakfast, sandwich with wholewheat rounds, only 110 calories for one bun.
I have a snack of nuts or crackers and cheese in the afternoon. Our  dinner is a big salad and some protein. The protein
can be hard boiled eggs, which I keep in my refrigerator at all times like Lily and Dave), chicken, fish, lean ground beef.
One of my favorites is Montreal chicken seasoning, garlic powder and onion powder on chicken thighs baked in the oven
 at 385 degrees for about an hour. Put foil on the pan for easy clean up.  Easy and delicious !

Whatever diet or healthy eating plan you are following is okay. Just be sure you are getting enough
nutrients and calories to lose weight. We sometimes starve ourselves and our body rebels and
thinks we are starving and won't let those pounds come off. Try to space out smaller meals thru
out the day. You will be less hungry and alot healthier.

 Recipe for Corned Beef Cabbage (This one is for you Freddie)

Ingredients:
3 pounds of corned beef brisket with spice packet
10 small red potatoes
5 carrots, peeled and cut into 3-inch pieces
1 large head cabbage, cut into small wedges
1 large onion, chopped

Directions:
Place corned beef into large pot or Dutch oven and cover with water. Add the spice packet that came with
the corned beef,( must have that ). Cover pot and bring to a boil, then reduce to a simmer. Simmer
approximately 50 minutes per pound or until tender.

Add whole potatoes and carrots, and onion, and cook until the vegetables are almost tender. Add
cabbage and cook for 15 more minutes. Remove meat and let it rest 15 minutes.

Place vegetables in a bowl and cover. Add as much broth as you want(cooking liquid reserved in the Dutch oven or
large pot) . Slice meat across the grain and serve. Delicious and nutritious ! Have your corned beef with mustard
on it, you will love it !

Prep Time 10 minutes Cook Time 2 hrs 30 mins You can find this any many other great recipes on the website
http://www.allrecipes.com then search for corned beef and cabbage, they have many recipes for this dish.
